@Brahms:
Thanks to things like the Chameleon boot loader and PC EFI it's pretty easy to roll OSX on your pc, provided you have a board that is sufficiently mac-like. (see OP for details)

There's still some fiddling with drivers involved (putting the right .kext in the right Directory and rebuilding the caches), but if your google-fu is strong the you more often than not find solutions. (Fortunately writing drivers for mach doesn't seem too hard...)

But at the end of it all, what's the overall experience? Seamless? Broken?

Basically, would it be worth my effort to rip of osx rather than just running ubuntu (which I have very few problems with)

Not as slick as on the real deal, at least judging by my hardware. But it makes me feel more comfortable as anything Windows in the last few installments (that includes 7).
To be fair, I haven't given a productive Ubuntu a shot in quite some time (I occasionally use it in a VM to build some .deb's for my Linux servers... Other than that OSX has just about enough unix under the hood to keep me happy), but unless you're gonna rebuild your installation -- as I did -- I'd suggest you stay with that.
If you do reinstall anyhow and happen to like OSX, I suggest you try it. Google myHack, that's what I used, it's pretty straightforward.
