I used to be a big reader (before I got married) and can still go through an average novel in about 7 hours. I'd just like to pass on my recommendations and ask everyone else for their recommendations.
George RR Martin, Song of Swords Series,
Bloody brilliant fantasy in a medievel setting, just wish he would finish the damn series.
Iain M Banks, Culture Novels
Best Sci Fi out there, check out his contemporary novels too, especially Crow Road.
Terry Pratchett, Discworld Novels
Still very funny. I personally prefer the later books.
Katherine Kerr, Deverry Novels
Fantasy set in a Celtic world.
That's my suggestions for today.

Love the Discworld books. I'd have to agree with you that the later books are probably better. That said, Mort is still one of my favorites

The Time Traveller's Wife
by Audrey Niffenegger is my favourite book ever- also notable for being equally readable for both men and women. Film's coming out soon, and if they fuck it up there will be blood flowing in the streets.
On a slightly more geeky note, Stephen Baxter's
Destiny's Children
trilogy is about as good as I've found for sci-fi.

I'm an avid reader of Sci-Fi and Fantasy.
Started out in my early teens with Feist and Eddings (Belgariad ftw! ), Robin Hobb. Gradually gravitating towards Sci-Fi as I get older.
Seconding George R R Martin, Song of Ice and Fire series.
Definitely pissed at him over "A Dance with Dragons" though, I recall that when "A Feast for Crows" came out (2005!), he was saying that both crows and dragons were originally one book, and was split in half due to length. All the content on dragons was supposedly finished and the book ready for release in a couple of months.
Recently read a lot of David Weber (much is available legally for free to read online). I'm really enjoying his "Safehold" series, which starts with the book "Off Armageddons Reef"
Peter F Hamilton isn't bad, Nights Dawn trillogy is great, but has a shitty ending. Fallen Dragon is a nice starship troopers type story, and the commonwealth sage is pretty good.
I'm also enjoying his Void trilogy so far (only 2 books done as yet).
At some point I plan to start Donaldson's Gap Series.

good writers, read all these when i was younger (belgariad and the liveship series being my favorites)
atm i've tried moving onto some more different stuff, right now i'm reading Catch 22. if that book doesn't confuse the hell out of you then its a very good read! its the blackest black comedy i've ever read. and next i have Less than zero to read by the same guy who wrote american psycho

I've wanted to read them for ages and finally i've managed to get a few of them. Just finished Colour of Magic today, bloody brilliant so far. Also the Bromeliad trilogy by TP is really good too.
Other recommendations i would make,
The Magician Series, by Raymond E Feist. Very good fantasy novels, although i haven't had a chance to read anything else by him yet.
The Saxon Stories series, by Bernard Cornwell (of Sharpe fame). They are exceptionally good books and i can't wait for him to write another.
The Hitchhiker's Guide to the Galaxy, by Douglas Adams.
The
greatest sci-fi novel of all time, in my opinion, i've read it maybe a dozen times and it never gets boring.
Most Tom Clancy books, pretty good action novels, Rainbow Six being my favourite.
Anything by Robert Rankin, if you like quirky sci-fi, mostly very amusing too.
And of course Dune, by Frank Herbert. I've not read any more than the original trilogy, which is fantastic, but i hear the ones written by his son are not quite up to scratch.

For the most part I like Sci-Fi and Horror, but interestingly I'm not that much interested in Fantasy (but read a lot of the Discworld novels ... obviously
)
As a reader I tend to rather go deep than broad, meaning if I have a writer I like I tend to read a lot of that author, but I don't experiment too much.
With Sci-Fi I like a lot of the older writers: Asimov (which as I recall hasn't many fans here), Silverberg, Farmer, Brunner, also Jack White or Roger MacBride Allen.
I really love Stephen King (especially the Dark Tower novels), but also Peter Straub or Clive Barker. I have yet to discover Lovecraft, Campbell and the like.
On a very different subject I can recommand the "Queen & Country"-novels by Greg Rucka (based on his comic series).

Big Robert Rankin fan, love the Apocalypse Trilogy. Also, love TP, Pyramids is my favourite by far. I also like reading Hunter S Thompsons journalistic work from the 70, a warped interpretation of a wierd and wonderful era. John Irving is another epic read for wierd lovers, Hotel New Hampshire and The Cider House Rules are my particular faves. Also, just starting to get into graphic novels (comics) The Watchmen being my fave as well as some of the Evil Ernie series (only because Lady Death is hot).
