Ah, but the pyro achievment map is great because there's a clear line of sight to the bot spawn positions, and lots of ammo

Usually when im trying a class I haven't played much of, my first call is usually Mama (he's given me good demoman and spy tips) and youtube. When I was learning spy, OMFGNinja and Daedalus spy videos helped alot.
But I also agree with mark that map knowledge is key for spy; you have to know the exactly where health is when you get set alight, exactly where ammo is to get the best out of your cloak and the best way to sneak up on people.
Definately, class lessons are a good idea. You could get some "pupils" spectating the "instructor" playing on a pub server while he talks to the pupils about what he's doing over teamspeak or something similar.

Hmm.. sniper cant really be taught... like scout.. they require a LOT of practice, good reactions and good aim!
Some of you might remember me before I played sniper, I was AWFUL when I started... Since then, I clocked up over 150 hours playtime and this is how I have improved! most of you dont have the time to spend doing that... so itll be something to work on, in your own time maybe?
I would however like some heavy and medic training... (I think everyone should be capable at medic for the sake of the team... if nobody is medic, its nice to help out)

But now you are a bloody formidable sniper, just goes to prove how sniper is just alot about the practice.
Oh and i played some Css the other night for the first time in the best part of a year, then went onto TF2 with papa, milli and a couple of others. It helped my sniping drastically, cant remember his name but this guy raged quit after i raped him loads of times when he was a scout lol. So a bit of Css might be the answer to getting better at sniping.

The sniper can be taught I think. There are some very basic and simple tips and rules to playing sniper (besides being able to aim), that if you don't realise then you really suffer playing the class.
Surprisingly you might need better reactions as a sniper then a heavy, pyro or soldier, the amount you have to move around your aiming cursor.
I'm not the best at the class but can hold my own if I know the map. Here's some starter ones:
You need to get headshots nominally. There's plenty of times when you might shoot something static, but most of the time it'll be moving too. If you can't do this, at all, practice. It's not difficult once you work out how to "camp" certain map choke points.
Don't bother starting as an offensive sniper. It doesn't work, you'll die a lot and score 0. I'd leave that until you learn where enemies come from on defence.
Don't bother learning to play sniper on Well, Granary, Badlands, Fastlane, Steel or Turbine. Not at all good for new snipers. Best idea is Badwater, Dustbowl and Goldrush for obvious reasons (you can play a strictly defensive side). 2Fort, and ctf_well are a bit better though, and Gravel Pit is possible but harder then the main 3.
Know your basic sniper positions on a map. Check where your teams snipers go. High vantage points allow easier headshots, and having a way to spot the people on the point/cart is a good idea. Also being able to see choke points and windows are important (especially on Goldrush, Badwater and Dustbowl).
Be careful about spies. If you get backstabbed a few times (this will happen, you won't hear them until it's too late if they cloak and you don't have pyros checking) then move position.
Disabling enemy snipers is an important goal. If you do kill one (and you know there are no more) remember they take time to respawn (at least 10 seconds including time to get back to their spot), so killing some other people in the meantime is a good idea.
Main priority:
Medics (especially ones with an ubercharge. If ubered, you might want to aim at the person being ubered to take them out when it ends).
Secondary priority:
Snipers (because your team mates likely can't deal with these themselves easily apart from spies).
Tertiary priority:
Other attackers (going for the CP or cart or possibly to destroy a sentry gun).
Last priority:
Retreating people, or ones not directly going for the point (such as chasing friends down other locations or going for sentry guns).
Killing low health classes (snipers, engineers, scouts, spies) takes any uncharged headshot. Check
here
for some nice values for what you'll need to take out enemies. Notice that you can easily kill these classes with a body shot too. Saves a ton of time.
Your secondary SMG is nice for taking out scouts, and melee weapon for spies.
If you're on fire, go get healing. Any damage moves your sights, so fire just ruins sniping. This goes for rockets being shot at you (move out of the way of them) or possibly even other classes who can shoot many shots (such as heavies) firing at you at a medium distance.

If I have the time I'll teach Soldier, Sniper and Medic and maybe Heavy. I'm terrible as a scout (give me rocket jumps any day), and unpracticed as a spy (I did play a bit of it when I first got TF2 but not any of the recent maps or patches at all!)
I'll happily learn some spying techniques even though I know the basics. I'd not mind being able to use the class if I feel the need to in a game

soldier (comp play) priorities:
pocket:
1.locking the enemy combo in a duel until reinforcements arrive - you can be aggressive and go for them, but that leaves your medic vulnerable. the roaming soldier should often distract from the above so you can move in without danger.
2. to be honest, the enemy combo is your main and mostly only one, but..
2a. the point =]
roaming:
1.enemy roaming soldier, due to him being on your height
2. combo - not much the kill but the much-needed 3/4 rocket spam distraction, which can give your combo the winning edge
3. demoman - again, demo/scoots are yours demo/scoots priorities.
by combo, i mean medic 1st then soldier, but preferable both
