This is now officially the most de-railed thread ever. Anyone have any tips for getting Steam to work on Ubuntu using WINE? It nearly works, it launches but then my session restarts, and everything closes. (  )

Yeah, it's really simple. You need a Windows CD/DVD and boot from it. Then select install, it will ask you to select the partition, chose the Ubuntu one. After a while this is done and Ubuntu is compatible with windows programs, best noticable by a slightly different GUI. Now download & install steam, it should work without any further steps.
