Jesus, I don't just make topics, I dispense them.

Anyway, Team Fortress 2 does have some interesting types of game maps. Granted, some games may have more but we still got some damn fine variety.
Let's review them, shall we?

Capture the Flag
CTF - ctf_name
Each team has an intelligence briefcase, serving as the 'flag'. The goal of the map is for one team to capture the intel and return to their own base.
Some variations of this gametype have one team with the intel and one attempting to retrieve it, essentially an attack/defend twist.
Examples; ctf_2fort, ctf_turbine

Control Point; Even
CP - cp_name
Each team owns at least one control point. The goal of the map is for one team to capture every control point on the map while defending their own from capture.
This is usually seen as the favoured 'pro-gaming' type (before Arena appeared), though seems to only be because of the evened control point structure.
Examples; cp_granary, cp_well

Control Point; Attack/Defend
CP - cp_name
One team owns at least one control point. The goal of the map is for the attacking team to capture the control points while the defending team must prevent them from capturing them.
RED Team always seems to be defending while BLU Team always seems to be attacking. Strange. Oh yeah, this seems the most popular type as well.
Examples; cp_dustbowl, cp_gravelpit

Territorial Control
TC - tc_name
A deviation of Control Point - Even, each capture changes the layout of the map. The goal of the map is for one team to capture every control point on the map while defending their own from capture.
Due to the fact of only having one official Valve TC map (at the time of writing this), Territorial Control seems to be the least popular map.
Examples; tc_hydro

Payload
PL - pl_name
An attack/defend structured gametype. One team must push the payload cart through all the checkpoints while the other team must try and prevent them from doing so.
Payload, along with Control Point - Attack/Defend, seems to be one of the favourite gametypes. It is certainly similar yet distinctly different.
Examples; pl_goldrush, pl_badwater

Arena
AR - ar_name
A gametype much more different than any other. Both teams must either kill the opposing team - as there are no respawns - or capture the single control point (unlocked after one minute).
With no respawns and a deathmatch style of play, this is more of a competitive gametype than the others. Whether people like it is a matter of taste.
Examples; ar_lumberyard, ar_ravine

Zombie Fortress (Just had to add this one. XD)
ZF - zf_name
A mod of Team Fortress, as every Valve game simply must have zombies. An attacking team must capture all the points while a defending team must try and stop them. When human attackers are killed, they become zombie defenders.
While an unofficial gametype, this has reached a lot of fame quickly and seems to become promising and popular. Plus it's Left 4 Dead for cheapskates.
Examples; zf_dustbowl

Those are all of the ones I can remember. Well, all the ones that actually have conflict in them (note the exclusion of race, achievement and so forth).

So, finally the part where you come in.
What is your favourite gametype?

I myself enjoy Arena and Payload the most, but I also like Control Point maps. I openly hate Capture the Flag, though.

it wasn't plasma rifles, it was 5 monkies with each of the 5 weapons from the weapon set Cheesy

flame tag was awesome though, junning around on fire trying to light someone else. basically tag but made more interesting by introducing fire, thats how you can make any simple game more exciting. try it at home kids!

Gotta be... Catch the chicken. An ancient mod for Quake 1. You had to grab the chicken and run and hide. Whilst you had the chicken you couldn't shoot. Trouble was the damn bird kept clucking and left a trail of feathers. Win by owning chicken longest. Sounds stupid but what a giggle!
