Usually if you want to see what weapons you're using then I'd suggest using the weapon bucket icons (disable quick weapon switch in the keyboard options menu).
Sadly, TF2 HuDs don't support an easy way of displaying weapons being used in the HuD - I think for most HuD makers they assume the player is able to identify the weapon from the clip size and ammo reserve when they have their view models turned off.
Personally, I don't see the need for switching them off - perhaps for hitscan because the bullets move in a straight line (in a comp. setup) from your crosshair but projectiles (barring the Original) fly out diagonally from right to left across the crossair and I find the viewmodel helps giving me a judge on what angle I should be using.
tl;dr - No. But you can bother HuD makers on ETF2L.org and see if that's any profit.
