Well some Soldier training would be nice  I can help you out with Soli if youd like. I dont really play much TF2 anymore but I still know the basics of pocket and roaming and all the good jumpspots.

What's next in this?
Lefty's mentoring sessions were very helpful but where should I go next for 6v6? I still want to see what it's like.
I know I need to get more confident sticky-jumping and do it more.I reckon it makes sense to focus on one map with an easier rollout like granary and practice more off-line and then do more pubs?
I'm not confident enough yet for tf2lobby and seeing how I do there. It's not really for learning I think.

It's probably best that maybe we start looking at getting some internal double mixes together. It would probably require some planning in advance as there's probably next to no chance getting 12 people on mumble only hours in advance...

I've started playing tf2lobby. They're very mixed. Mostly better than me obviously, but I sometimes impress myself. I think its main value is in teaching you tolerance. I think the next step is this: http://steamcommunity.com/groups/6v6newmix - they have alerts for two or three mixes every day - but I haven't worked up the nerve.

Given the following list:
Allytk - Soldier/Demoman Berath - Demoman Hawker - Scout Omni - Medic (/Soldier) r007 - Medic Sk1nn3d - Soldier/Medic Terror – Demoman iondine – Soldier? cautet – Scout? fraac – Medic?
You have easily enough to build a team:
Medic - r007, Skinned, fraac Soldier – Allytk, Sk1nn3d, iondine Scout – Hawker, Omni, cautet Demo – Terror, Berath (most of above is based on where people have filled in when I’ve played 6v6 with them).
Why not just get stuck in and start getting some mixes? Try and get a couple of the more experienced 6v6 players to sit in mumble with you and spec to give advice (this is usually okay if you ask the other team) or fill in classes where necessary?
It’s how I started – you will lose a lot to start but will quickly get the hang of it and I found/find it much better to try and play with the same group of people so that you all learn how each other plays and work better together as a team. There is also less pressure when you are playing with people you know and everyone has the same expectations so that there are no worries of rage etc.
Internal mixes are all well and good but apart from being a pain to organise 12 people it also is hard when you mix people with different abilities such that I don't think you will get as much out of it. Personally think it is much better to play as a group against people of similar level.

If I know beforehand it shouldn't be a problem. I've been less prone to spontaneous gaming as of late, sorry for that. Make it an evening of mixing a week, and I'm pretty sure I can be there just fine.
