Right so here's how it's gone so far and game's I've tried.
There's a few issues I've had but there's workarounds for around 75% of the problems.
Most AAA games work great or at least well out of the box with 3 screens. Some (Blur/Skyrim for example) have MAJOR menu/hud issues.
Managed to fix Skyrim with a hack. I have to inject a hack into the process to make the menus work right. I'm guessing either Bethesda or modders will fix this in the future (Once the construction set is out at least).
TF2 (and all source games) work amazingly if you use custom huds. They work with stock huds but things that are set to the far left/right (HP/Ammo) of the screen are way out of view on the side screens otherwise.
Unreal 3 (and I guess all games based on this engine) have unplayable huds and the FOV is measured horizontally (source and a lot of other games are vertically) so you don't see any wider than a normal 16:9 setup.
Most older games work great with the setup though. The ones that don't can't be fixed through mods as this res wasn't even thought of then

The biggest gripe I have is the lack of desktop solutions. Out of the box, if I maximise a window, it'll do it across all 3 screens. This can make general web browsing very tedious. I had to download some matrox tripple head 2 go drives and use their desktop solution. That works really well though, I'm super impressed with that. I think I'd even use it on a single 1920*1080 screen. Might be worth looking into if you use a larger resolutions. It asks you to install drivers for the matrox unit you're using but you can ignore that. You just want the desktop management part
