Easter Eggs are little things hidden into games by the developer for the player to find, or not, as the case may be.

One example was in an old version of MS Excel there was a driving simulator/game built into the program which you can access by following a series of steps.

Also, John McCarmack (or was it Romero?) in Doom 2 and the Lost numbers in HL2 and and and and *dies*

edit - In Episode 3 (or 4) of the latest Sam and Max series theres a section where you can hit a dispenser over and over with a wrench until it comes to life. Youpoop it, its awesome.

There's some good ones in the GTA games, two that immediately come to mind are the sign high up on the Golden Gate bridge in San Andreas that says something like "There are no Easter Eggs up here, go away!". Also within the Statue of Liberty in GTA IV is a giant beating heart.

Thinking Valve games, in Half Life: Blue Shift, at the bottom of one of the lockers is a cardboard box. If you shoot it a certain numbers of times (the number is equal to the total amount of ammunition you can acquire at that point in the game from the firing range etc., I don't remember the specific figure), it breaks, and there is a small purple alien known as a Chumtoad inside that was cut from Half Life pre release.
