Random idea I got recently, not fully balanced yet: the throwaway sentry.
The engineer has to build it similar like a lvl1 sentry and then holds it in his hands, while being held, it does not shoot and the engi can't switch to his weapons. What he can do, is throw the sentry. The second he throws it, it starts shooting, even while flying. The sentry is physics enabled, meaning it can roll after being thrown (obviously it should be shaped a bit like a ball, less like the current one), and even pushed around afterwards, for example by a rocket.
I'm not sure about balancing: How many can be deployed at the sime time? How much time/metal does the "crafting" consume? Can teammates push the sentry aswell? (Would lead to nice tactics, could be abused for griefing.) How much health should it have? It could be near impossible to hit for a while once an enemy solly hit it with a rocket and sent it flying.
