Ok another noobie question then. When you go on idle server what do you acutally do? Watch in "afk" mode

you do nothing ie. you idle. The drop system doesn't distinguish between active and idle players (it even allows drops for those in spectator mode) so the more you idle the more drops you get, the more chances you have to get a hat.

The idler allowed you to do this without having tf2 running. achievement_idle servers need you to connect with tf2 running and make you join a team so others can farm achievements (i think).

Nope, you can spectate if you want to and if you join a team you can just stand in spawn and do nothing (and get constant damage for whatever reason).
There are the 2 spawnrooms and a (locked) cp in the middle. The only class able to attack you if you don't leave the spawn is the demo with his grenades.
